Persian saffron or sargol saffron as it is sometimes known, traditionally comes from the deserts of middle Asia - most notably Iran. In fact, Iran accounts for a majority of the saffron production in the world.

Iran sometimes has strict exporting sanctions and the quality of the saffron grown in Iran is usually extremely high - therefore, the price of sargol saffron is usually a little higher than typical world saffron prices. SaffronChef buys sargol saffron that is grown in regions bordering Iran, but not in Iran itself. While the quality of Persian saffron is usually very high, the stigmas that Iranian saffron flowers produce are usually a little shorter than Kashmiri saffron and the color of the saffron is usually a little lighter red.
